Misty Gully Cure#2 6% Nitrite 4% Nitrate 500g
Misty Gully Cure#2 6.25% Sodium Nitrite 4.0% Sodium Nitrate with 89.75% salt is suitable for slowly developed air dried meats where development occurs over a number of weeks. It is equivelant to Prague Powder #2 or Instacure #2. The Nitrites protect the meat in its early stages of development. The Nitrates break down to become Nitrites during further development. This gives your Salami or other slowly developed meats the added protection they need from atmospheric contamination.
This product has been coloured for safety purposes. Meat cures containing Sodium Nitrate must not be heated above 600C.
Ingredients: Salt (89.75%), Sodium Nitrite (6.25%) Sodium Nitrate (4.0%), Colour.
Do Not Use Cures Containing Nitrates For Jerky, Semi Dried Sausages, Bacon, or other hot dried meats.
Nitrates need time to break down before they are suitable for human consumption.
