French Cheese Ash 5 gram
Green Living Australia's Cheese Ash is used in French cheese and goat cheeses. A vegetable ash coating provides the surface of the cheese with a suitable environment for the desired mold growth and rind formation.
As an alkaline agent Cheese Ash helps neutralise acidity in the cheese. This allows the at home cheesemaker to achieve a desired balance with acidity to age the cheese. Ash is nearly flavorless so it doesn't directly contribute to the taste or texture of a cheese but it does does have an effect on aging of your home made cheese.
